Here are some of the fruits from the 2 varieties of eggplant/aubergine I planted this year. The top one (all purple) is 'Long Purple' and the bottom stripy one is Tsasoniki'. So far we've enjoyed them simply cooked on the BBQ and the taste is fantastic, full of flavour.
However, now that I have received 'How to Store Your Garden Produce' by Piers Warren that I won from Spades and Spoons, I'm going to try out one of the recipes in this book called 'Brinjal Pickle', an Indian pickle with fresh ginger, garlic and various spices. Looking forward to trying that with a good curry soon, maybe lamb.
I do like eggplants and am growing some from seeds right now. Hoping they do well. Yours look wonderful!

ReplyDeleteThese were grown from seed also. The plants took a while to get established and fruit, but 2/6 of mine are doing quite well now. The others were maybe not in the right location and sulked, so I lost them to 'wilt'.

Your eggplants look yummy. I have started some plants from seed. they are doing well. I can't wait for it to be time to plant them outside. I have to be patient and wait a few more weeks. Emily

Oh I love a good eggplant and am always looking for new recipes. The pickles sound great, I'd be really interested to hear how they turn out.
