Carrot cake

With a surplus of carrots in the house - I had a bag of shop-bought ones that needed using up and we are now getting our own from the garden (post to come), plus an empty cake tin, I decided to make a carrot cake today.

It was easy to prepare using this recipe and the verdict was "mmmm, very nice indeed".

Yum I love carrot cake. Got to have a look at that recipe now. Great photo of the cake - bet it tasted wonderful!!!

Yes it tasted pretty good I have to say. Oddly I've never made carrot cake before! The recipe was really easy because you use oil not butter so no creaming required.

Hi Brenda, thanks for your comment and like to The Best-Ever Carrot Cake Recipe. The maple icing sounds great, I love maple syrup and have a Canadian friend who brings me a bottle when she visits! (It's very expensive to buy real maple syrup here)
